Pistachio Pudding Marshmallow Squares

When summer is upon us...it's time to make some summer time snacks...
I use to make these for my kids and they loved them...you can make these
as low-fat as you would like, by using fat free or low-fat Cool Whip and
Honey Maid Low Fat Graham Crackers...
You can skip the chocolate all together...
But I really love a little chocolate every now and then...mostly now!!
Here are the ingredients to make these low fat that
even the kids will love snacks!
1 3.4oz. box of Instant Pistachio
Pudding & Pie filling
1/2 cup of Mini Marshmallow's
(more or less)
1 box of Honey Maid low-fat graham crackers
1 8oz tub of Cool Whip
2 squares of Semi Sweet Chocolate
Use a cheese grater for the chocolate
Mix the pudding according to the box
this size of pudding is 2 cups cold milk
whipped with a hand whisk for
2 minutes
Fold in the cool whip
and the marshmallow's
Snap the crackers down the middle
and spoon on the pupping mix
making a sandwich
dip each side of the
square in the chocolate!
(you can freeze the pudding for a little while to help it set)
Wrap each square with plastic wrap and freeze
Or you can do this and let the whole family dig in!!
