Mini Lemon and Chocolate Meringue Pies

I love sweets it's one of my weaknesses...and I love a
good pie...but now that our kids are out of house...
it's hard to make a whole pie for just 2...so I
made these and they are the perfect size.
The lemon is my favorite...
I used 1 box of the heat and serve Lemon Pudding,
follow the directions on the box...the crust is Honey Graham Crackers
crushed...I lightly buttered my custard cups on the bottom...spooned in
my cracker crumbs (do not press the crumbs down)
put a few small dollops of butter...spoon
the cooled pudding over the crust...beat your egg whites on
high speed gradually adding in 1/3 cup of sugar...
beat until stiff peaks form...spoon the meringue on top of custard
cups, place on a cookie sheet and bake in a
325 degree oven...keep an eye on them they
brown pretty quickly.
Truly the lemon is so good!
