Spiced Walnut-Mandarin Orange Salad & Grilled BLT

   "Spiced Walnuts"  
I find great deals at our local WalMart on spices!
Here's what you need:
1 egg white
1 tablespoon water
2 cups walnuts
1/2 cup sugar
1 tablespoon cinnamon
1/2 teaspoon of ground allspice
Preheat oven to 225 F.
Line a large shallow baking pan with foil.
In a bowl, combine egg white and water, beat until foamy.
Add walnuts and toss to coat. Pour mixture into a
strainer and let drain for 2 to 3 minutes.
Combine sugar, cinnamon and allspice in a
plastic or paper bag, shake to mix. Add
the walnuts and shake vigorously to coat
the nuts. Spread the nuts in one layer
on the baking pan.

Bake for 1 hour, stirring every 15 minutes.
I used two timers...one I set for 1 hour
and the one for each 15 minutes...
Remove from oven and let cool stirring
occasionally and breaking the nuts apart
if they are stuck together.
Don't worry if they stick to the foil (they will)
it's easy to peel them off.
Store in a sealed container.
Makes 2 Cups


"Spiced Walnut-Mandrin Orange Salad"
I make this salad with some of my leftover 
Cinnamon Spiced Walnuts, I add in some Dried Cranberries

The juice from one orange


and about a teaspoon of orange zest
Drain (1) 14.oz. can Mandarin Oranges lite syrup 
in a strainer, saving 1/2 cup of the syrup for 
your salad dressing
Add your orange juice, orange zest, 1/2 of 
lite mandarin syrup and 1/4 cup of 
extra virgin olive oil
I used a Spring Mix European-Style 
with fresh baby spinach, baby lettuce greens.
Mix in walnuts, cranberries, mandarin oranges, pour 
dressing over salad, toss and serve.

"The Grilled BLT Sandwich"
This is my husband's favorite sandwich
it takes longer to make than your average BLT but it's worth it...
It's Really Good!

Cook bacon the way you like it...we use Farmland Hickory Smoked Bacon
Slice ripe tomatoes and place on a paper towel to soak up excess juice
I drizzle extra virgin olive oil and sprinkle sea salt over all of the slices
I used a freshly baked loaf of Artisan French Bread
I drizzle olive oil, sea salt and a dash black pepper
Then I grill each slice of bread, only one side using my grill pan
I use a sauce pan lid to apply pressure so all my 

bread grills evenly


For the lettuce we use some of our salad greens,
that's already been tossed...it adds that extra splash of flavor

We find a movie to watch and dig in!
