Cauliflower Pizza, Flat Bread, Tortillas & Burritos!!

What's for dinner?
Cauliflower and it's delicious!
Cauliflower is so good for us, that's why it is often
called a Super Food...this is a great way to get kids to eat it!
My husband absolutely loves Pizza, but it's so fattening and not at all healthy...
So I kept hearing about cauliflower pizza & I gave it a try. 
I couldn't believe that it was so good. Now my husband brings home cauliflower!!
It's super easy to make!

(The pizza above is made with Low Fat Turkey Pepperoni)

 This one has tomato, basil, turkey pepperoni and olives!
This sandwich is sooo good...I crave this one!
It's hard to believe that this isn't bread...make one of these and don't
tell anybody that it's cauliflower...my mother in law loves pepperoni pizza
so we had her over for lunch one day...she took one bite and said
what is this, this is delicious!


So here's what you do
To Clean
Soak the whole head or cut it up into smaller pieces.
Completely cover the cauliflower with salt water.
To every 4 cups of water add 2tbsp of salt. I put a heavy plate on
top to keep the cauliflower from raising to the top of the water.
Let it sit in the salt water for 10 minutes.


Rinse off and let dry on paper towels. Then remove the core and
all the leaves. Cut it up into smaller pieces and put
it in a food processor or use a cheese grater.
You want it to look like rice.


1 head of cauliflower will make about 3 pizza's.

To make the pizza crust
In a big bowl scoop out 2 cups of Cauliflower
2 cups of low fat Mozzarella Cheese
2 Eggs
Combine all the ingredients together and spread it out onto a
pizza pan or cookie sheet lined with parchment paper.
Bake in a 425° for about 15 minutes.
Let it cool for a couple of minutes.
Then put all the fixings on and bake 10 to 15 minutes.
To make the Flat Bread
I just added Basil and baked it just
like the pizza!
To make the Sandwich
Spread out the cauliflower real thin and bake until golden brown.
Then just add all the things you love on a
regular sandwich...put it back in the oven until it's heated through.
This is so good...but you do have to eat it
with a fork.
It's a hearty & delicious sandwich!
You can also make Tortillas
Again they are super simple to make.
Bake them just like the pizza.
Make them a little bit bigger and make
Burritos

I can't tell you how happy I am that I tried this...because it truly is
amazing and it's good for us...give it a try if you haven't
already...you won't be sorry...my husband just
loves it and hasn't asked for a regular pizza since I
started using cauliflower...in fact he told me
he doesn't want regular pizza anymore!
I was so HAPPY!
